About Chef Lauren

When I first stepped foot into my mother’s commercial kitchen at the age of 8, I knew that my lifelong passion was, and remains, the culinary arts. Throughout the years, my relationship with food has grown and changed; however, one thing has always remained constant to me: food is life, love, and creation. It is how I relate to the world and the people around me. In essence, food is my most meaningful expression of love and my purpose is to share that with the world.

It is my strongest belief that all ailments can be treated through healing the gut first. I myself am proof that it is possible to heal the body when you change the way you eat. My degree in culinary arts from The Culinary Insitute of America gave me the tools to apply the knowledge I have learned in order to facilitate healing through food. A lifetime of working with food has exposed me to many different diets and cooking styles. I pride myself on my ability to adapt and create food for many different dietary restrictions and preferences in order to please the palette and promote healing for all who eat my food. It is my absolute pleasure to create food and my biggest belief is that food should serve a greater purpose. “The end of all knowledge should be service to others.” - Cesar Chavez.

What started out as simply a career has morphed into a greater purpose to heal people through food. This mission started simply to heal my own ailing body. Throughout my life, I have struggled with many stomach-related issues. At the age of twenty-three things escalated dramatically, I was diagnosed with Crohn’s Disease, and shortly thereafter required stomach surgery in order to address the disease which had taken over my body. After two years of treating my condition with Western medicine, which treats the symptoms, not the actual disease, I decided to take matters into my own hands and heal my body by getting to the root of the problem: the gut. Thus began my lifelong journey and passion for healing with food.
